Biksemad

A favorite among Danes, Biksemad (pronounced bek-sa-ma) translates to "mixed food" and is a Danish version of hash, made of fried potatoes, onions, and leftover meat (usually pork...try mixing with Frikadeller, a pork-based meatball). It is quick and easy to make, and the taste never disappoints.
Just writing about Biksemad makes my mouth water! Growing up, my parents made this meal often, and my job was to peel and slice the potatoes. Nowadays, I use a food processor, which definitely makes slicing potatoes much quicker. The smell of this dish cooking lingers for days and makes home smell super cozy, if that's a thing!

Ingredients:
6-8 medium-sized potatoes
½ tsp black pepper
1 tsp salt
½ chopped onion
Leftover meat (aim for a 2:1 ratio of potatoes to meat)
Vegetable oil

Prep Time: 20 minutes
Cook Time: 15 minutes
Makes: 4-6 servings
Directions:
1. Peel and slice potatoes. Slicing with a potato peeler takes some time; the process is much quicker using a food processor.

2. Dice onions finely.

3. Chop up leftover meat.
4. Layer frying pan generously with vegetable oil.
5. Add potatoes, black pepper, salt, onion, and meat, stirring together. Fry over medium heat, stirring frequently, until potatoes are cooked and browned. Potatoes should have a little bit of a crunch.
