Mason Jar Salads

One of the biggest impediments to cooking at home is lack of time. With busy job schedules, kids, and family obligations, it's little wonder that people choose to eat out. But when we forgo home-cooked meals, we also lose out on the cozy atmosphere that home food prep provides. Let's be honest...nothing makes us want to be home more than the smell of good food cooking or knowing we have something homemade in the fridge to eat. So needless to say, I am a fan of anything that makes eating at home easier. Perhaps it's the dietitian in me!
I came across the concept of mason jar salads several years ago when I attended a salad-making party. The process of layering vegetables into a jar is so much fun (it reminds me of layering colored sand as a child), and it's a simple way to stay healthy all week! Mason jars are extremely versatile, so rinse out and reuse jars for candles, applesauce, or jam.

Prep Time: 15 minutes
Makes: 3 jars
Ingredients:
Spring mix greens, 2 cups
Whole kernel corn, 15-ounce can
Great Northern beans, 15-ounce can
Matchstick carrots, 1/2 cup
Cherry tomatoes, 9-10
Salad dressing, 3 tbsp

Directions:
1. Cut each tomato in half.
2. For each jar, add a layer of greens, corn, beans, carrots, and tomatoes.


3. Top each jar off with 1 tbsp of salad dressing.

4. Place lid on jar, and refrigerate. Salads for the next 3 days are done!
