Rundstykker (pronounced rund-stook-er) translates to “round pieces” and are poppy seed-topped rolls, usually eaten for breakfast in Denmark. When staying with my Danish grandmother, I used to bike half a mile to a bakery that specialized in making this delicious roll. Yes, bakers actually train for years to make this roll just right! And to the best of my ability, I have been making it on my own whenever possible. Rundstykker is a yeast roll that takes time to prepare, so make it early in the morning or the night before. A little trick I learned along the way...store these rolls in gallon-sized plastic bags once they begin to cool to keep them moist.
Prep Time: 1 hour 15 minutes
Cook Time: 17-20 minutes
3 ½ cups of bread flour
1 tsp salt
1 tsp sugar
1/4 cup (1/2 stick) melted butter
1 package rapid rise yeast
1 cup warm water
1. Mix bread flour, salt, sugar, egg, butter, yeast, and water together; I prefer to mix using an electric mixer but by hand is also fine. The water must be the right temperature in order for the yeast to become activated and work. I take cold water and heat in microwave ~45 seconds to reach 95-115 degrees Fahrenheit.
2. Lightly flour parchment paper, and knead until dough has a stretchy (but not sticky) texture.
3. Place in a bowl and cover with saran wrap, allowing dough to rise in a warm environment (the kitchen, sitting on top of a dryer) to double its initial size (~45 minutes).
4. Divide dough into 8 equally-sized round rolls.
5. Dip tip of each dough ball into poppy seeds.
6. Grease cookie sheet or line with parchment paper. Set out each roll, leaving space for growth. Cover with saran wrap, and allow to sit for ~20 minutes, until size nearly redoubles.
7. Preheat oven to 425°F.
8. While preheating, spray the oven with water; you can also dip your hand in water and fling water against the edges of the oven. The steam will create a moist environment for the rolls and give the crust a flaky texture and the inside of the roll a moist consistency…it’s almost like eating a croissant.
9. When oven ready, place cookie sheet on center rack.
10. Spray oven (including rolls) with water once again, and bake for 17-20 minutes, or until lightly browned.
11. Spread jam or cheese on the roll and enjoy with coffee or as breakfast!
