Krugekage (pronounced crue-a-ka-ah) is a Danish spice cake that makes a perfect addition to coffee or tea. As a child, my grandmother made this cake regularly, and it became one of my favorite desserts to make as I grew older. Consider making several loaves at a time since it never sits around for long! If you like this recipe, try out my Brunkager recipe, which uses many similar spices in a cookie form.

Prep Time: 15 minutes

Cook Time: 60 minutes

Makes: 1 loaf


½ cup (1 stick) butter

2 large eggs

2 ½ cups all-purpose flour

½ cup white sugar

½ cup firmly packed brown sugar

2 tsp baking powder

½ tsp salt

1/2 cup raisins

1 tsp cinnamon

½ tsp ginger

½ tsp cloves

½ cup cream

1 cup walnuts, chopped


1. Preheat oven to 350°F.

2. Melt butter and set aside.

3. Sift together ginger, cinnamon, cloves, flour, baking powder, and salt.

4. Whisk eggs, slowly adding the white and brown sugars.

5. Combine egg/sugar mixture, melted butter, and dry ingredients on low using electric mixer.

6. Slowly add cream, and continue mixing on low.

7. Add nuts and raisins.

8. Grease 9x5 metal pan, and pour in batter.

9. Bake at 350°F for 60 minutes. Top will be golden when finished. Test by inserting wooden toothpick into center; if liquid batter still present, bake for additional 5-10 minutes.

10. Let cool before cutting to minimize crumbling.
